Western Australia has some of the best sardines available

Sardines are a fantastic source of calcium and Vitamin D. These flavoursome little fish are a smaller species that support a wide range of recipes featuring lemon and garlic or Moroccan spices, but they can also be served straight from the tin or even on a sandwich. Serve as an entrée, as tapas or a main meal. Western Australia has some of the best sardines available, so check out your local fish shop.

Don Hancey’s Cooking Tip
Whole, fresh or frozen sardines are delicious when grilled on a barbecue. Simply drizzle with a little olive oil, sprinkle with salt and finish off with a squeeze of lemon juice. Tinned sardines can be lightly mashed in a bowl with chopped parsley, fresh lemon juice and pepper and served on wholemeal toast. It’s quick, easy to prepare, great value, healthy and oh so tasty!

Experiences
Mendolia Seafoods in O’Connor is a retail outlet where you can source local sardines. A second-generation Sicilian fisher, Mr. Mendolia is out on his boat every day from 2am to catch and bring you fresh sardines.

Fisheries
The Australian sardine is caught by purse seine between Perth and Esperance and is fished throughout the year.
