Sardines are a fantastic source of calcium and Vitamin D. These flavoursome little fish are a smaller species that support a wide range of recipes featuring lemon and garlic or Moroccan spices, but they can also be served straight from the tin or even on a sandwich. Don Hancey’s Cooking Tip
Whole, fresh or frozen sardines are delicious when grilled on a barbecue. Simply drizzle with a little olive oil, sprinkle with salt and finish off with a squeeze of lemon juice. Tinned sardines can be lightly mashed in a bowl with chopped parsley, fresh lemon juice and pepper and served on wholemeal toast. It’s quick, easy to prepare, great value, healthy and oh so tasty!
