With a preparation time of only 20 minutes, you can quickly whip up this oyster extravaganza by Catalano’s to impress your friends or family on any occasion.
Serves 2 – 4
Cooking tip: Choose oysters that are full, plump and have a light salty smell to them.
Ingredients
1 dozen fresh oysters
Sesame soy dressing
Virgin Mary sauce
Gin and basil puree |
Methods
Sesame soy dressing:
- Combine 1 tsp sesame oil, 2 tbsp light soy sauce, 2 tbsp Shaoxing wine in a small bowl and whisk together. Chill.
Virgin Mary sauce:
- Combine 125mL tomato juice, 2 tsp Worcestershire sauce, 3 drops of Tobasco and 1/2 celery stalk that’s been finely diced. Chill.
Gin and basil puree:
- Blend 1 cup of fresh basil leaves and 1 tsp salt in a food processor, slowly adding 125mL extra virgin olive oil until you have a smooth puree. Strain the puree through a fine sieve and chill the strained liquid.
To serve:
- Arrange the oysters flat and level onto an oyster tray or bowl plate with some crushed ice at the bottom. Place 1 tsp of each sauce on 4 oysters then garnish the sesame soy with some sliced spring onion, the Virgin Mary sauce with a small celery stalk with a leaf, and the basil puree with 1 tsp of gin and a couple of pieces of lemon zest to finish.
